It is the dish that propelled Australian cuisine to international stardom and came to immortalize millennial spending habits. Not bad for a simple breakfast.
Like many now popular Australian breakfast dishes, Bill Granger of Sydney cafe Bills is credited with the invention of avocado toast, or at least for spawning its popularity.
There are no end of options on how to make avocado toast, but for me the key is to mix the buttery texture of the avocado with at least one citric element and some heat.
In this recipe those roles are played by fresh lemon juice and red pepper flakes. It is the perfect way to start the day!
INGREDIENTS
1 small avocado
2 tablespoons lemon juice
1 tablespoon red pepper flakes
Salt and Pepper to taste
1 slice of thick country bread
INSTRUCTIONS
1. Smash the avocado with a fork in a bowl with the lemon juice until spreadable but still slightly chunky. Add salt and pepper to taste.
2. Toast the bread.
3. Spread the avocado on the bread and sprinkle it with red pepper flakes. Enjoy!
