Zucchini Slice is one of the quickest and most popular dishes in Australia that is easy to whip up any time of day. Think of it as a kind of half bread slice, and half frittata.
This recipe ramps up the flavour by cooking the onions and the bacon before adding them to the dough. If you are in a hurry or just prefer not to, you can skip this step as they will cook in the oven.
To avoid any chance of the slice getting soggy it is recommended to salt the zucchini and let it sit for around 20 mins after grating it to help it release its water. Then squeeze out as much of the water from the zucchini as possible.
If you like in the U.S. or somewhere else where self raising flour is not always available, you can use plain flour and add 2 teaspoons of baking powder per cup of flour. This will give the flour the same raising effect.
Also be careful not to overmix the dough as this will form gluten and make the slice tough. Mix the flour in just enough so that it is absorbed. If there are still bits of flour in the final dough it shouldn’t matter as it will still cook through.
INGREDIENTS
2 cups grated zucchini, squeezed dry
1 1/2 cups grated cheddar cheese
6 eggs, beaten
1 medium yellow onion
3 strips of bacon
1 cup self raising flour
Salt and pepper to taste
1 teaspoon butter or oil
INSTRUCTIONS
1. Heat the oven to 180 C, or 350 F.
2. Grate the zucchini, place in a colander and add salt. Let sit for around 15-20 mins then squeeze out the moisture using your hands, a spoon or spatula, or a nut bag.
3. Melt the butter or oil in a frypan, add the onions and salt them to help them release their moisture. Cook until transparent, then add the bacon, cut into small pieces. When browned, transfer to a plate and set aside.
4. Beat the eggs in a large bowl and then add the grated zucchini, bacon and onions, grated cheese and salt and pepper and mix together. Add the flour and mix just until it is mixed in.
4. Pour the mixture into a baking tin that is either greased with oil or butter or lined with baking paper.
5. Cook until it is lightly browned, around 30-40 minutes. Serve and enjoy!
